Storing and Safe Handling
Here is everything you need to know about maintaining the freshness and quality of our oysters at home. Below are tips and techniques that will enhance your oyster experience, ensuring you enjoy these delicious delicacies to the fullest!
Keep 'Em Cold and Dry
Always store oysters between 34°F - 45°F (fridge or cooler w/ice).

Place them in a breathable container, such as a mesh bag or an open container covered with a damp cloth. Do not use airtight bags or expose the oysters to water during storage, and never freeze your oysters!
Safe Shucking
Use a proper oyster knife and protective glove or towel to avoid injury.
Insert the knife at the hinge of the shell and twist gently - do not force, and keep your fingers clear of the blade.
Vendor Accountability
Always check or ask the oyster's harvest date to determine freshness. This information can be found on the oyster's "tag" and should be readily available when you ask.
So next time you're at the grocery store, restaurant or local farmer's market we recommend asking your vendor!
Shell Disposal
Place shells in sealed bags for disposal to avoid attracting pests and odors.
Since shells decompose slowly, they are typically NOT accepted in organic bins or home compost bins.
Oyster Shelf-Life
Oysters are hearty little creatures! With proper care and storage, they can last up to 7 days.
Discard any with open shells or bad smells, and avoid cross contamination with other food, ice and water.
Shell Recycling
Never return shells to the water unless part of an approved shell recycling program, like the Oyster Recovery Partnership
